tomato cream sauce + meatballs.


I have such a hard time battling onions.  It's painfully ugly - the peeling, the chopping, the sautéing.  If only I were a master-chopper-faster-than-lightening-onion-dicer.  Alas no.  I'm just your on-par-average dull-knife wielder.  Besides the obvious solution - learning to chop so quickly the onion stink doesn't have time to penetrate your eyes, did you know there are things you can do to avoid the misery?

>> Freeze the onion for 15 minutes before chopping to slow down the pungent sulfuric acid.
>> Dice the onion under cold water.
>> And then I found this article in case you decide to tackle onions like a pro-dicer!  In my dreams.

Okay, moving on...  The Pioneer Woman Cooks.  Pasta with Tomato Cream Sauce.  Good, yummy stuff and one of the easier recipes to follow.  Me likey.






Isn't the pasta pretty?  In my house, there's no such thing as pasta without meatballs.  Husband doesn't do pasta because of his too-good-for-carbs-ways-of-eating, plus we all just really like meatballs.  And the Pioneer Woman's meatball recipe is TO.DIE.FOR.  Best meatballs ever.  Jackson {who might be one of the pickiest eaters around} said those words over and over.  He gobbled them up.  Husband gobbled them up.  We are them with the pasta, we ate them in spaghetti sauce, we ate them plain, and then we put them between two slices of italian bread, which might just have been the best thing ever invented in this whole, wide world.






It does NOT get any better than that.
