easy-style fried tacos. because easy is awesome.

Mom, can this be the only way you make tacos from now on?

OMG, you guys.  These tacos, messy, but so good.  
This is my quick version of the Pioneer Woman's Chicken Tacos.
Because I served these up for lunch and lunch is not supposed to be as extravagant as dinner, am I right?

I used:
corn tortillas
canola oil
ground beef
taco seasoning packet
shredded cheese & toppings

While frying the ground beef {according to the directions on the taco seasoning packet}, heat the canola oil in a separate skillet. Fill it up about an inch or so with the oil.  I keep my burner at 5 (medium) because once oil gets too hot, it takes on an evil force of its own and it scares me.  Once the meat is done and the oil is hot, place a scoop of cooked taco meat onto the middle of the corn tortilla, sprinkle on some cheese, and then fold gently {corn tortillas like to rip open}.  I used tongs to place them ever-so-gently into the oil and held the taco folded for a sec so that it didn't flop open.  After about 40 seconds, I flipped it over and let the other side have a turn to fry to a crisp {we must be fair about these things}.  Set the tacos onto a paper towel to absorb the oil, let them cool a minute, then dip them in fresh salsa and eat them to death.

four for friday.

Good things:

My yard continues to bloom and bloom!  The previous owners of our house left us with some amazing landscaping and new flowers seem to pop up each week.  This week has been a little rainy & cloudy, but once the sun peeks out, you can find me out in the yard!  And in the evening... those fireflies?  I'm a kid again.

Mama's nest is full, once again!  Husband and all of the kids are back home from their cross country adventures and the laundry baskets are full, the beds are all unmade, and the snacks in the cupboard are disappearing fast!  This is the stuff that gets a mom stressed sometimes, but also makes a house a home. I love a full nest.

I filled three wall frames with downloadable printables I purchased from Printable Wisdom on Etsy and I love them!  I purchased each print for $5 bucks and printed them out on card stock paper.  They turned out so clear and crisp.  I don't think anyone would guess they were downloads.  I chose this one, this one, and this one.  I have a photo of my results on Instagram.  If you don't already, you should come follow me!  @acrossanddown

This Huffington blog post about mom-competition woke me up in a good way and I'm going to change my outlook starting now!  Honestly, I'm having the hardest time putting myself out there socially.  When we moved almost a year ago, I saw it as a chance to start anew and get involved and meet new people.  But I didn't really do that.  I stayed shy and worried way too much about what other women were thinking about me. These days, I find myself joking about the fact that I'm friendless and antisocial.  I have completely labeled myself to the point that I actually believe I can't make friends.  Do you know how much time I am wasting believing my stupid inner voice?  Too darn much!  I'm done.  The good news is that I don't have to buy into my own b.s.  I'm going to stop believing it's true. I mean, just look!  You're here reading this, right?  Because you like me.  And I like you too.  :)

Competition is just like shame.  It only exists for people who believe it does.

letting the light in with a simpler look.

When we bought this house it came with a terrific window valance in the dining room, but it swallowed up the top third of the window.  I'm trying something new and forgoing any window treatment.  I like my light and now we get so much more!!!  And the view opens up to our very private backyard, so privacy isn't a worry.

I'm still getting used to such a simple look though.  What do you think of bare windows?

Is this just a phase?  Am I going to be putting that valance back up?

summer solstice and the super moon.

Life is good for Misty.

That's what Husband likes to text/email me whenever I send him a fun photo.  And it's a true statement.  Life is good.

With three-fifths of the family still gone, McKenna and I have been passing our time at the pool and at the amusement park {sorry about the instagram overload}.  We have been spending our nights under the party lights, listening to music, catching fireflies, and admiring the great big moon.  Pittsburgh summers happen to be amazing.  I mean, like really amazing.

Tomorrow we'll be reunited with the boys!  I can't wait to hear about their Spokane adventures.  Of course it will just be nice to have the house full again.  :)
